I wanted to create healthy lunches that were easy to eat for my children at lunch. In Japan mothers will easily spend an hour a day to create that special lunch to delight their little emperors. Now that I work full time, it's nice to work on something that will remind my kids daily that I love them very much, or at least Monday through Friday!
